Well, sub 0.5% anyway. Kom-BEER-cha, if you will. That was the start. Now it’s on tap every week, brewed right here in the warehouse.

The word kombucha (コンブチャ) comes from Japanese - it originally referred to a tea made from kelp (kombu). How it ended up naming a fermented sweet tea is a bit of a mystery, but the name stuck. What’s in your glass is a naturally fermented tea - tangy, lightly effervescent, and full of live cultures. It starts with tea and sugar, then a SCOBY (a symbiotic culture of bacteria and yeast) gets to work, fermenting the sugar and producing organic acids, B vitamins, and live cultures.
We brew ours in small batches, right in the brewery, using quality loose-leaf tea and real fruit.

Our kombucha contains trace amounts of alcohol (typically 0.2-0.5% ABV), which is a natural byproduct of fermentation. Under UK law, beverages below 0.5% ABV are classified as non-alcoholic. No alcohol licence is needed to sell it, and no age restriction applies.

Kombucha is naturally gluten-free - made from tea, sugar, and water. However, we brew in a working beer brewery using some shared equipment. As a result: may contain gluten (barley, wheat). If you have coeliac disease or a severe gluten intolerance, please be aware.
This is an unpasteurised fermented drink containing live cultures and trace amounts of alcohol (typically under 0.5% ABV). If you are immunocompromised, pregnant, or have specific health concerns, consult your GP before drinking.
